Green tea has been used in China as a healthy, medicinal drink for approximately 5,000 years.
Oolong and black teas emerged as prosperity in China declined
Oolong and black teas are processed from oxidized tea leaves with some added aroma not present in fresh tea leaves. In ancient China, these teas were produced sporadically, by frying at high temperature the partially degraded oxidized tea leaves which could not meet the stringent timing requirement for green tea production.
Green, oolong, and black teas all come from the leaves of the Camellia sinensis plant. What sets green tea apart is the way it is processed. Green tea leaves are steamed, which prevents the EGCG compound from being oxidized. By contrast, black and oolong tea leaves are made from fermented leaves, which results in the EGCG being converted into other compounds that are not nearly as effective in preventing and fighting various diseases.
Black tea has dark brown color. In black tea, most of the antioxidants are polymerized & inactivated, but the caffeine in the tea leaves is preserved. Therefore, the caffeine contents in black tea are higher than in green tea by weight. Black tea was primarily consumed by the minorities living in the northern and the western peripheral territories of the empire where preservation of the quality of green tea was difficult due to the long transportation time required to reach the market.
